This recipe is for everyone who has a pressure ham cooker and is looking for inspiration for making new dishes using it, as well as for those who do not have this device yet, so that they can find out how easy it is to use it to prepare homemade processed meat for everyday and festive occasions. Rolled bacon is great on healthy sandwiches with the addition of home-grown sprouts. We would like to remind you that preparing food is a great idea to 'reset' your head and take a break from everyday worries. Take care of your health!

Preparation:

Stretch the bacon to the length of the pressure ham cooker – so that it can be wrapped like a roulade.

Mince the pork using a mincer, preferably using a coarse mesh plate (8-10 mm), or use pre-minced meat. Rub most of the salt into the bacon thoroughly and add the rest to the minced meat.

Add seasoning to the minced meat and knead it thoroughly. Spread a thick slice of bacon on a board, then spread an even layer of minced meat on it. Roll the whole into a roulade and place it on a casing with spices so that the spices touch the meat.

If necessary, adjust the casing to the length and width of the meat, cutting it to size in the appropriate places. Next, wrap the meat in the casing and place in the pressure ham cooker.

Close the pressure ham cooker tightly. Place a thermometer in the hole at the top of the device that allows measuring the temperature inside the meat. Put the pressure ham cooker into a pot of water. Steam the whole thing at 75-90°C until the inside of the roulade reaches 70°C.

After this time, remove the pressure ham cooker container from the pot of water and leave it to cool down. Then place the pressure ham cooker in a refrigerator. After a few hours (at least 5), the rolled bacon can be taken out of the pressure ham cooker. Peel off the casing from the finished bacon – the spices will adhere perfectly to the surface of the meat.
